Middle Eastern street food is a foodie’s dream. Many classics such as shawarmas, falafel and hummus have skyrocketed to global popularity and continue to tantalize our taste buds. Our Chefs have crafted a plant-based recipe for Ras el Hanout Cauliflower Pita with all the Middle Eastern flavor without the meat. Ras el Hanout is a Middle Eastern spice blend that loosely translates to “top shelf” in Arabic and is used in a number of savory dishes. It can be used to flavor soups and stews, as a rub for meats and fish, or stirred into couscous and rice dishes. As with most traditional, regional spice blends, every family or spice merchant has their own individual version that can be curated based on region and overall preference. Many authentic Ras el Hanout recipes have 20 or more ingredients, and sometimes even 100! Common ingredients include coriander, clove, nutmeg, turmeric and paprika; with regional classics such as orris root, dried rose petals and anise seed.

For this recipe, cauliflower florets are tossed in our luxurious Ras el Hanout blend then roasted to perfection. These golden nuggets are then stuffed in a toasted pita with all the “extras” like chopped greens, sliced onions and exuberant tomatoes. Feel free to add more of your favorite fillings such as creamy hummus, tahini sauce, (vegan) yogurt and even pickled vegetables for a true Middle Eastern street food experience. You can also use the roasted cauliflower in other dishes like quick salads or added to a grain bowl. 

Ingredients

  • 1 head of cauliflower, cut into florets

  • 2 Tbsp olive oil

  • 1 Tbsp Piquant Post Ras el Hanout, divided

  • 1/4 onion, sliced

  • 2 cups greens

  • 1 tomato, sliced

  • 4 pitas

  • Garnish: 1/4 cup chopped cilantro, vegan yogurt (optional)

Notes

Toast the pita bread to add a crispy texture to the sandwich. This can be done by lightly brushing the pita with olive oil and toasting it in a hot oven or on a pan.

Fill the pita with other fillings of your choice, such as hummus, tahini sauce, lettuce, and tomato. You can also add additional ingredients like avocado, pickled vegetables, or a protein source like grilled tofu or tempeh to make it a more filling meal.

Experiment with different spices to find your desired flavor. You can also try adding additional seasonings to the cauliflower before roasting, such as lemon juice, garlic, or cumin. Check out this recipe for a delicious twist!

Instructions

Preheat the oven to 400.°F. Cut the cauliflower head into bite sized florets. Toss with the olive oil and 2 tsp Piquant Post Ras el Hanout. Season with salt and black pepper. Spread onto a sheet pan.

Place the sheet pan into the oven and roast for 20 minutes or until the florets are fork tender. 

Toast the pitas in a toasted oven and cut in half. Stuff with the cauliflower, onion slices, greens, and tomato. In a small bowl, whisk ½ cup vegan yogurt with 1 tsp of Ras el Hanout spice. 

Garnish with chopped cilantro and vegan yogurt to taste.

Alternatives & Substitutions

  • There are many alternative ways to use the ras el hanout roasted cauliflower beyond just filling a pita sandwich. For example, you could add it to a grain bowl for a delicious and healthy lunch or dinner option. 

  • Simply combine the roasted cauliflower with ingredients such as quinoa, brown rice, or roasted sweet potatoes, along with some greens and a flavorful sauce. 

  • Another option is to make a roasted cauliflower salad by tossing the ras el hanout roasted cauliflower with mixed greens, cherry tomatoes, and a lemon vinaigrette.
